Veggie Burgers -- So, so yummy!

    Ingredients:
  • 1 1/2 C cooked brown rice
  • 1 can refried black beans
  • 1 1/2 C raw organic sunflower seeds
  • 1 1/2 C raw organic pumpkin seeds

Preparation: I use a food processor to first grind the seeds together. Then I add the brown rice to the processor mix and process some more. I then open and add the black beans by hand, using a wooden spoon to smooth out the mixture.

That's it for the mix! Next form into patties.

Cooking: Either pan fry for about 10 min per side or bake for about 25 min at 350 degrees.

Serving: Serve with or without bun, melted cheese, bed of lettuce, tomato, vegannaise, mustard.

Enjoy. It's a big favorite at our house!

It All Began (Again) with Paul McCartney ...

Paul McCartney narrated a PETA documentary called "Glass Walls: If Slaughterhouses had Glass Walls, Everyone Would Be a Vegetarian."

After I watched this video, I could not eat another animal.

I do not recommend this documentary for young children. On the other hand, it seems to me to be important for an older child's education to know how meat is brought to market, so that, going forward, each person can make a conscious choice about whether or not they will participate in this kind of slaughter. Hiding it does not make it go away.

This documentary brought me to tears, frustration, embarrassment and shame to be a part of a species that has so much invested in cruelty to animals. And such a haughty assumption that we humans are superior.

Thus begins my blog, Viko the Veggie, charting the course of my conversion to vegetarianism, including the yummy menu selections.

Thank you, Sir Paul. Once again -- we all know what happened in '63 :) -- you change my life for the better!
